Cake Care, Storage & Serving Guide

GENERAL GUIDE:
Do not place desserts in direct sunlight or heat

Please visually check desserts before consuming.
Serving recommendations are only suggestions, how to serve is entirely up to personal preference!

BUTTERCREAM CAKES
STORAGE:
Store cake in refrigerator for up to 3 days
Wrap leftovers/store in airtight container to prevent drying out
If buttercream cake has been displayed for more than 1 hour at room temperature or 4 hours in air-conditioning, it is advised to consume all the cake on the same day and discard leftovers.

To freeze, remove any decorations like thyme, rose buds etc. and tightly wrap cold cake and freeze.
It is not advised to freeze cake with fresh whole fruit like peaches, lychees, strawberries, guavas and blueberries. Raspberry is ok, unless otherwise stated.

SERVING:
Enjoy the cake when cream has softened.
In an air-conditioned room (~20°C), let cake sit out for 1 hour but no more than 4 hours before serving.
At ambient room temperature (28°C), let cake sit out for 15 to 30 minutes before serving, but no more than 1 hour.
Butter’s melting point is about 35-36°C.

CHEESECAKES/TIRAMISU
STORAGE:
Refrigerate at all times for up to 3 days
Transfer to airtight container
SERVING: Serve chilled

FINANCIERS
STORAGE: Leave at room temperature in a covered container for a day, if not refrigerate for up to 7 days
Freeze: wrap in cling wrap or foil, for up to 1 month
SERVING: Reheat in airfryer/toaster oven/oven 200C for 2 minutes or until crisp and warm
BEST consumed on day of collection or served warm.

CHOCOLATE & RYE COOKIES
STORAGE: Leave at room temperature in an airtight container for a day, if not refrigerate for up to 5 days
SERVING: Best consumed on day of collection.
Enjoy at room temperature, cold from the fridge or lightly warmed up in a 160°C oven/airfryer for 2-3 minutes or until warm

SOUFFLÉ CHOCOLATE CAKE
STORAGE: Refrigerate for up to 7 days or Wrap in cling film and foil then freeze for up to 1 month (recommended to slice first before freezing).
SERVING: Serve chilled. Thaw in fridge overnight from freezer if frozen.
Optional slicing recommendation: use a hot metal knife that has been warmed up with a blow torch or hot water to get a clean, sharp slice – wipe the knife with a clean towel after every slice.

CHOCOLATE, HAZELNUT & BUCKWHEAT TART/PISTACHIO KATAIFI CHOCOLATE TART
STORAGE: Refrigerate, 3°C to 4°C for up to 5 days
Tart freezes well. Wrap in cling film and foil then freeze for up to 1 month.
SERVING: Serve chilled. Thaw in fridge overnight from freezer if frozen.

BANANA LOAF CAKE/CINNAMON CRUMBLE CAKE/LEMON BUTTER CAKE*/BUTTER CAKE/ZUCCHINI & OLIVE OIL CAKE
STORAGE:
Transfer to airtight container or cling wrap box. Leave at room temperature for 2 days.
Refrigerate for up to 1 week.
To freeze, cling wrap cake and store in freezer for up to 1 month

SERVING:
Enjoy thawed at room temperature, straight out of the fridge cold or warmed up for 10 seconds in the microwave until slightly warmed or toast in airfryer/oven at 200C for 2 mins or until warm
*lemon glaze will stay crisp for approximately 24 hours and will melt due to moisture.

PINEAPPLE & PARMESAN LINZER TARTS
STORAGE & SERVING:
Reseal box with tape or transfer to an airtight container and consume at room temperature within 5 days from collection date or refrigerate/freeze for up to 1 month (thaw to consume at room temp. or consume cold).
Best served chilled.

PARMESAN SABLÉ
STORAGE & SERVING:
Store at room temperature in airtight container or reseal container, see best by date on container ~ 1 month

NUT & CHOCOLATE GRANOLA
STORAGE:
Granola comes in a zipped bag.
Recommended to transfer to an airtight container if stored at room temperature away from direct sunlight and heat or store in the fridge for maximum freshness for up to 4 weeks.



TRANSPORT

Place your cake on a flat, levelled surface e.g. floor of the car, not on the car seat.

Can I store my cake in the car for an hour with the AC switched off?

No, it is not advisable.
We advise you not to leave frosted cakes in the car unless you have brought your own cooler bag and ice pack or purchased a cooler bag from our site. The car’s internal temperature rapidly increases once the air-conditioning (AC) is turned off.
Our cakes are frosted with buttercream and to understand the best temperature to hold and consume it, we have to understand how butter works.
Butter’s melting point to a liquid consistency is 32-35C.
Once above 28C for more than 15 mins, the cake will start to melt and sag.
Best consumed at 22C – the buttercream is at a silky texture.
It stays solid below 18C.

How long can my cake stay outside for?
Our cakes are frosted with buttercream and to understand the best temperature to hold and consume it, we have to understand how butter works.
Butter’s melting point to a liquid consistency is 32-35C.
Once above 28C for more than 15 mins, the cake will start to melt and sag.
Best consumed at 22C – the buttercream is at a silky texture.
It stays solid below 18C.
Treat our cakes like how you would treat a regular frosted cake. Try to plan your time around collecting the cake to refrigerate as soon as possible.
Condensation may occur in our hot and humid weather and cause the cake to weep or drizzles on the cake to melt.
Avoid direct sunlight.

Below 22C (in an air-conditioned environment):

  • 2 hours (then freeze or refrigerate)
  • after 4 hours, discard

28-30C (on a regular Singapore day):
1 hour

31-34C (on a hot Singapore day):
30 minutes

In the car without air-con:
20 minutes
advised to get a cooler bag with ice pack
