
July’s slices. We usually make whole cakes but once a month we host a slice sale – we make new things, different things, and also slice up whole cakes to taste.
It’s now summer in the northern hemisphere. Taiwan’s subtropical weather fruits gorgeous pink guavas during this time of the year, this year, pink guavas fell off the shelves a little earlier than usual, but I really love the pink guava cheesecake. During a food exhibition event, I tasted this kiwi + avocado snack and it reminded me of the flavor of pink guava! With that in mind, I replaced the fresh guava curls with green kiwis. It was the best decision yet.
I’ve also been toying around with the idea of making a brown cheese burnt cheesecake recently and finally got around to tweaking it. The first iteration just replaced some of the cheese with brown cheese but the flavor got lost. This time round, I replaced the sugar with brown sugar and candycap mushroom extract. It lifted the brown cheese flavor and it is exactly what I imagined it to be. :’)
I’m moving forward with the idea of just making things that I like, taking a break mid July to refresh the menu. Of course, seasonality still matters to me as fruit not in season can make a person really dislike fruit, but it isn’t the most important thing – flavor is.

Kiwi & pink guava cheesecake

Mixed berry & vanilla tartlets. Chocolate, buckwheat and hazelnut tart.


Peach, lychee & milk oolong tea cake. Devil’s food (chocolate) cake. <- my go to birthday cake flavour.

Earl grey lemon tea. Finally bidding this number farewell after 10 years. I always think I’m sick of it but when I taste it, I’m reminded of why I liked it. It’s one of those things.

Finally, corn bread. My first ever corn muffin was from kenny rogers. It’s such a nostalgic flavor. It tastes like creamed corn? When I first tried Tierra Vegetables‘ bloody butcher cornmeal, my whole life changed. I really don’t mean to be dramatic, but the flavor from their cornmeal is on a whole new level. There are not fresh corn kernels in the corn bread, just the flavor from the cornmeal.
