I’ve always disliked Christmas fruit cakes that you can buy at the neighborhood bakeries or the ones that are given in hampers simply because they either have those scary bright red or green glace cherries that I’ve never fancied or also if the cake itself is crumbly and dry. THIS Christmas fruit cake, on the other hand, is filled with gorgeous dark dried fruit like prunes, cranberries and sultanas that aren’t tooth-achingly sweet. It also has fresh orange zest, dark rum and a tablespoon of cocoa powder for depth. It’s topped with a generous handful of nuts. And it stays moist for a good week in the fridge if kept properly. ^.^
